Pool Party
Today I had office hours for an hour and a half in the morning. In the evening, we had a pool party to celebrate Hannah and Janus before they leave for Pakse tomorrow.
Fried Chicken
I went to the store across the street to buy chicken for the party, and I had to bag it myself. I finally took a picture!

In Laos, you always self serve your chicken. Sometimes you self serve some pork products as well.
I made fried chicken with egg, panko breadcrumbs, and salt for the party. I fried the nuggets in sunflower oil because it’s more inexpensive than vegetable oil here, and because it gave the chicken a nice golden brown color. I learned how to make Chick-fil-A sauce and made a batch for our party. The chicken and Chick-fil-A sauce were a big hit with my fellow ETAs. Someone said it reminded them of home, which was nice.

My apartment has a rather large pool, which is nice since it is hot almost year round in Laos. Laos doesn’t seem to have many pools. It seems like the only places that have pools are fancy hotels and my apartment building, which was built by a Chinese company.

Tomorrow Hannah and Janus leave for Pakse, Champasak. They will be teaching English at the University of Champasak. They are staying in a hotel for a week or so before they search for permanent housing.

Hannah and Janus will come back to Vientiane in October for our group trip to Luang Prabang for the Boat Racing Festival and then in November for the Marine Ball. Hopefully we will all spend Thanksgiving together in Pakse at Hannah and Janus’s house. There is also the possibility that a Disney executive who worked on Raya and the Last Dragon will visit Pakse in November, and we might go to the workshops while we’re there for Thanksgiving, which is exciting. (This was a wonderful opportunity that the ETAs last year had, so we might have a similar opportunity, so I’m told.)
